What is Soul Food?
More than just a meal, it is a culinary language of survival, innovation, and community born from the African Diaspora.
"It is the food that was made when there was nothing else, turned into something beautiful."

INNOVATION
The West African Hearth
Before the Middle Passage, West African agriculture was world-renowned.
Complex crop rotation
Indigenous rice (Oryza glaberrima)
Staples: Yams, Sorghum, Okra
Enslaved people brought seeds—and knowledge—across the ocean.
Survival as Resistance
Scarcity to Abundance
Enslaved cooks were given the "leftovers"—pig's feet, chitterlings, turnip greens—and transformed them with West African techniques.
The Kitchen Garden
Plots behind cabins allowed for "provisioning"—growing traditional African vegetables to maintain health and culture.
YOUR MISSION

The Culinary Diaspora
Many of the ingredients we associate with Soul Food were not native to the Americas. They traveled across the ocean with the African people. Choose one of the following staple ingredients to research: Okra, Yams (True Yams), Black-eyed Peas, or African Rice (Oryza glaberrima).

The Crossing
Research the "Provisioning" of slave ships. How did this specific ingredient make its way to the Americas? Was it used as a ration, or hidden by enslaved people?

Where does this ingredient appear in classic Soul Food today?
Modern Nutritional Twist

The Challenge
You are a culinary historian and a modern chef. Your task is to curate a Heritage Portfolio that honors the history of Soul Food while proposing a modern, health-conscious 3-course menu for a local community event. You must bridge the gap between "Struggle Food" and "Soulful Wellness."
Deliverables
Annotated Menu: A 3-course menu (Appetizer, Main, Dessert) with historical annotations for each dish.
Ingredient Journey: A detailed map or timeline tracing one key ingredient back to its West African roots.
Wellness Shift: A written explanation of three specific nutritional adjustments made to traditional recipes.
Design Tip
"Soul Food is about heart. When designing your menu, use language that evokes memory, family, and tradition. Don't just list ingredients—tell the story of the hands that prepared them."
Evaluation Standards
Standard Exemplary (4) Proficient (3) Historical Depth Annotations clearly link modern dishes to specific West African or plantation-era traditions. Deep research is evident. Dish history is mentioned but may lack specific regional or historical context. Nutritional Innovation Adjustments significantly improve health profile (low sodium, healthy fats) without sacrificing cultural authenticity. Some health changes are made, but they may negatively impact the "soul" of the dish or be minor. Menu Design Professional, creative presentation. Language is evocative and themes are consistent across all three courses. Clear layout, but may lack a cohesive theme or engaging descriptive language. The Journey Map Accurately traces ingredient from West Africa to modern plate, highlighting key migrations (Great Migration, etc.). Ingredient journey is mapped but skips significant historical eras or transitions.
