Milk is a stable emulsion and colloidal suspension of butterfat globules and protein clusters called casein micelles. Cheesemaking is fundamentally the controlled destabilization of these micelles to separate solid curd (casein & fat) from liquid whey (water, lactose, & serum proteins).
1 Two Pathways to Curd Formation: Acid vs. Enzymatic Cleavage

Lactic acid bacteria ferment lactose into lactic acid, lowering pH toward casein’s isoelectric point (pI = 4.6). At this point, negative surface charges neutralize, repulsive electrostatic forces vanish, and micelle aggregates collapse.

Rennet / Chymosin Cleavage e.g., Cheddar, Gouda
The enzyme chymosin specifically cleaves the stabilizing hydrophilic peptide chain of κ-casein at the Phe105-Met106 bond, eliminating steric stabilization and allowing hydrophobic calcium bridging into an elastic matrix.

Lipolysis

Glycolysis

In cheese, colloidal calcium phosphate (CCP) links individual casein molecules together like cross-beams in scaffolding. At pH 5.2–5.4 (Mozzarella), an ideal ratio of calcium is bound: intact enough to maintain elastic chains, yet flexible enough to slide when heated. At pH > 5.9 (Halloumi, Queso Blanco), excessive calcium cross-links create a rigid scaffold that browns without liquefying.
