Adult Learning (Andragogy) Success Tactics
1. Center on Lived Experience Never lecture. Ask participants what they buy first. Acknowledge that cultural traditions and convenience hold high personal value.
2. Practical, High-Impact Swaps Focus on immediate modifications (e.g., swapping flour tortillas for corn tortillas, or choosing light canned syrup instead of heavy).
3. Maintain Dignity Avoid terms like "poor diets" or "healthy vs unhealthy foods." Frame foods as "nutrient-dense" or "energy-dense / celebratory foods."
4. Build Immediate Goal Agency Each goal must be completely actionable today, requiring no special kitchen gear. Keep them small, highly achievable, and self-tracked.

MyPlate shows us the five food groups that help us build a healthy, balanced eating pattern. Making half our plates fruits and vegetables, and varied proportions of grains, protein, and dairy supports sustainable daily energy.
1 Identify the Plate Groups
Write the correct MyPlate food group (Fruits, Vegetables, Grains, Protein, or Dairy) next to each budget-friendly food description:
Canned black beans, peanut butter, canned tuna, and hard-boiled eggs:
Whole wheat sliced bread, quick oatmeal, brown rice, and corn tortillas:
Frozen broccoli florets, fresh carrots, canned diced tomatoes, and spinach:
Low-fat milk, plain Greek yogurt, cottage cheese, and fortified soy milk:
2 My Usual Plate vs. MyPlate
Think about a typical dinner you had recently. Write down what was on your plate and how it fits the MyPlate groups.
My recent meal contents:
Was any food group missing? If so, which one?

Grain Gains
Powering your day with sustained energy, mastering label reading, and discovering why fiber is your body's best friend.
No-Kitchen Community Edition Let's talk grains!
Whole vs. Refined Grains
The Anatomy of a Grain
🌾 Whole Grains (Make Half Your Grains Whole!)
Contains the entire grain kernel (Bran, Endosperm, Germ).
Fiber: Cleans arteries and slows glucose absorption.
B-Vitamins: Converts food into steady daily energy.
Examples: Brown rice, whole wheat, oatmeal, popcorn.
🍞 Refined Grains (Processed & Stripped)
Processed to remove the bran and germ to extend shelf-life.
Stripped: Loses 80% of its dietary fiber and nutrients.
Spikes: Quickly digests, leading to blood sugar spikes.
Examples: White bread, white rice, flour tortillas.
"Look for '100% Whole Wheat' or 'Whole Grain' as the very first ingredient!"
Label Detective
Fiber Hunting
How to spot high-fiber grains:
Check the Dietary Fiber line under Total Carbohydrates.
Aim for at least 3 grams of fiber per serving!
Check the ingredient list: The first word must be "Whole" (e.g., Whole Wheat flour, Whole Oats).
The 5% and 20% Rule
Look at the **% Daily Value (%DV)** on the right side of the nutrition label:
5% DV or less is considered LOW in that nutrient.
20% DV or more is considered HIGH in that nutrient.
Tip: We want 20% or more for dietary fiber!
"Don't be fooled by brown colors—caramel coloring can make refined bread look whole!"

Bread Brand A
"Healthy Multi-Grain Slices"

• 1/2 cup Low-fat milk, fortified soy milk, or water
• 1 tsp Chia seeds or flaxseeds
• 1/2 tsp Ground cinnamon
• 1 tsp Honey or maple syrup (optional)
• 1/4 cup Sliced banana, apples, or berries
Smart Budget Hack
Buy a large canister of plain "rolled oats" or "quick oats" instead of packets of sweetened oatmeal. A 42oz canister provides up to 30 breakfasts for under $4.00!
Assembly Steps
Select a clean jar, container, or small cup with a tight lid.
Add 1/2 cup of raw oats and 1/2 cup of milk (or milk alternative) directly into the jar.
Stir in 1 teaspoon of chia seeds, ground cinnamon, and your honey/syrup sweetener if using.
Stir thoroughly to distribute the chia seeds, then seal the lid tightly.
Store in the refrigerator (or a cold ice chest) for at least 6 hours (or overnight). The oats and chia will absorb the liquid and turn thick and creamy.
Uncap, top with fresh sliced banana or berries, and eat cold!
Nutrition Quick-Facts
Beta-Glucan
Oats contain beta-glucan, a soluble fiber proven to scrub bad LDL cholesterol from your blood.
Steady Glucose
Whole grains slow down food breakdown, stopping energy crashes and late-morning cravings.
Chia Seed Boost
Just 1 teaspoon of chia seeds delivers heart-healthy Omega-3 fats and extra fiber.

Protein Diversity
Vary Your Protein
🍗 Animal Protein
Provides all essential amino acids. Best to choose lean, low-fat cuts.
Lean Choices: Sliced turkey breast, skinless chicken, canned tuna.
Saturated Fat: Fatty meats increase bad cholesterol. Limit red meat.
Store Rule: Check unit prices per pound! Canned tuna is highly cost-effective.
🌱 Plant Protein (Budget Superstars!)
Naturally cholesterol-free and highly economical.
Superstars: Black beans, garbanzos, lentils, peanut butter.
Double Benefit: Supplies both high protein AND high dietary fiber!
Cost Power: A can of black beans (~$0.80) offers 3 servings of protein!
"Swapping just one meat meal a week for plant protein saves money and cuts saturated fat!"
Portion Sizing
No Scale Required
Measure portions using your own hand:
1. Palm Size: A serving of meat, poultry, or fish should fit in the palm of your hand (approx. 3 ounces).
2. Tight Fist: A serving of cooked beans or lentils should equal roughly the size of your fist (approx. 1/2 cup).
3. Thumb Size: A serving of peanut butter or sunflower seeds should equal the size of your thumb (approx. 2 tablespoons).
Why Plant-Protein Wins on Budget
Let's look at average prices per serving in 2026:
Fresh Ground Beef: ~$1.45 per portion
Boneless Chicken Breast: ~$1.10 per portion
Canned Black Beans: ~$0.27 per portion!
Store-Brand Peanut Butter: ~$0.18 per portion!

• 1 tbsp Olive oil or canola cooking spray
• 1 tbsp Nutritional yeast ("Nooch")
• 1/2 tsp Garlic powder
• 1/2 tsp Onion powder
• 1/4 tsp Paprika or chili powder (optional)

• 4 cups Ice-cold tap water
• 1/2 cup Cucumber, thinly sliced
• 6-8 leaves Fresh mint leaves, lightly bruised
Smart Budget Hack
Avoid buying expensive single-use plastic bottles of flavored water. Slicing leftovers of grocery produce (like cucumber, lemon, or bruised strawberries) into cold tap water provides incredible refreshment for literal pennies!
Assembly Steps
Making the Popcorn:
Pop kernels using an air popper, or microwave 1/2 cup of kernels in a paper bag for 2 minutes.
Pour the warm, plain popped corn into a large bowl.
Give the popcorn a light misting of cooking spray or drizzle 1 teaspoon of olive oil, and toss to coat. This helps dry spices stick.
Sprinkle nutritional yeast, garlic powder, onion powder, and paprika over the corn. Toss vigorously until fully coated.
