Phase I. The process of digestion begins long before food ever reaches your stomach. It starts the moment you catch a whiff of a sizzling pizza or see a fresh bowl of fruit. Your mouth begins to water, a physiological response known as salivation. This anticipatory reflex prepares the mouth for the mechanical and chemical breakdown of food. Once you take that first bite, your teeth act as powerful grinders, pulverizing food into smaller pieces. Meanwhile, enzymes in your saliva begin the chemical work of dismantling complex starches into simpler sugars.

Phase II. After being chewed and lubricated, the food—now called a bolus—is pushed by the tongue toward the esophagus. The esophagus is a muscular tube that connects the throat to the stomach. It doesn't rely on gravity alone to move food downward. Instead, it utilizes a series of wave-like muscle contractions called peristalsis. Because of peristalsis, you could technically swallow food even if you were hanging upside down!

Phase III. As the bolus enters the stomach, it encounters a harsh, acidic environment. The stomach acts like a biological cement mixer, churning the food with powerful gastric juices. This cocktail of hydrochloric acid and enzymes serves a dual purpose: it kills harmful bacteria and further breaks down proteins. After several hours of mechanical churning, the food is transformed into a thick, soup-like liquid called chyme.

Phase IV. The next stage occurs in the small intestine, a twenty-foot-long marvel of biological engineering. Here, the body performs its most critical task: nutrient absorption. The walls of the small intestine are lined with millions of tiny, finger-like projections called villi. These structures increase the surface area significantly, allowing nutrients to pass through the intestinal wall and into the bloodstream.

Phase V. Finally, any remaining material enters the large intestine, or colon. At this stage, the body focuses on reclamation. It absorbs water and essential salts back into the body, leaving behind solid waste. Without this efficient recycling process, humans would quickly become dehydrated. The entire journey, from that first great gulp to the final exit, can take anywhere from 24 to 72 hours.
